- 3 cups cooked shredded chicken
- 2 cups crushed nacho chips
- 2 cups shredded cheddar cheese
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 cup sour cream
- 1 can cream of chicken soup
- 1 tablespoon taco seasoning
- 2 tablespoons chopped fresh cilantro
Instructions
- Preheat your oven to 375°F.
- In a large bowl, combine shredded chicken, corn, diced tomatoes, sour cream, cream of chicken soup, taco seasoning, and half of the shredded cheddar cheese. Mix well.
- Lightly grease a medium rectangular baking dish.
- Spread the mixture evenly into the prepared dish.
- Top with the remaining shredded cheese and evenly sprinkle the crushed nacho chips over the top.
- Bake for 25 to 30 minutes until hot, bubbly, and golden on top.
- Remove from the oven and let it rest for 5 minutes.
- Garnish with chopped fresh cilantro and serve warm.
Notes
- Use freshly shredded cheese for better melting and flavor.
- Do not over-crush the chips to keep a nice crunchy texture.
- Let the casserole rest before serving so it sets properly.
