Description

Moist chocolate muffins packed with ripe bananas, fresh strawberries, and melty chocolate chips. These bakery-style muffins are rich, fruity, and perfectly soft, making them ideal for breakfast, snacks, or dessert.

Ingredients

Scale
  • 2 cups all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed ripe bananas
  • 1 cup diced fresh strawberries
  • 3/4 cup chocolate chips
  • 2 large eggs
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and line a muffin pan with parchment muffin liners.
  2. In a large bowl whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In a separate bowl whisk the mashed bananas, eggs, milk, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Fold in the diced strawberries and chocolate chips.
  6. Divide the batter evenly into the muffin cups, filling them nearly to the top.
  7. Bake for 18 to 22 minutes until a toothpick inserted in the center comes out mostly clean.
  8. Allow the muffins to cool in the pan for a few minutes before transferring them to a cooling rack.
  9. Serve warm and enjoy.

Notes

  • Use very ripe bananas for the best natural sweetness and moisture.
  • Toss strawberry pieces lightly in flour before adding them to the batter to help prevent sinking.
  • Do not overmix the batter to keep the muffins soft and fluffy.
  • Store leftovers in an airtight container for up to three days or freeze for longer storage.
