- 1 cup green cabbage, finely shredded and squeezed dry
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 3 scallions, finely chopped
- ½ teaspoon salt
- About 30 dumpling wrappers
Instructions
- In a large bowl, mix ground pork, cabbage, garlic, ginger, soy sauce, sesame oil, scallions, and salt until combined.
- Place a wrapper in your palm, add 1 teaspoon of filling in the center, wet the edges, and fold to seal.
- Repeat with remaining wrappers and filling, keeping wrappers covered to prevent drying out.
- To steam: Bring water to a boil and place dumplings in a lined bamboo steamer. Steam for 8–10 minutes until cooked through.
- To pan-fry: Heat a nonstick skillet with a bit of oil, add dumplings, cook for 2 minutes, then add ¼ cup water, cover, and steam until water evaporates.
- Serve hot with a dipping sauce of soy sauce, vinegar, and chili oil if desired.
Notes
- Test-cook one dumpling to check seasoning before wrapping the rest.
- Freeze uncooked dumplings on a tray, then store in a freezer bag for later use.
- Don’t overfill wrappers to prevent leaks during cooking.
