Description

A crispy, cheesy Tex-Mex favorite made with stacked flour tortillas, seasoned ground beef, refried beans, enchilada sauce, melted cheddar and mozzarella, plus fresh tomatoes and green onions on top.


Ingredients

  • 8 small flour tortillas, about 6 inches each
  • 1 pound lean ground beef
  • 2 tablespoons taco seasoning
  • 1/4 cup water
  • 1 cup refried beans
  • 1/2 cup enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • Olive oil cooking spray, as needed

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper. Lightly coat both sides of the tortillas with olive oil cooking spray, arrange them on the baking sheet, and bake for 4 to 5 minutes per side until lightly golden and crisp.
  2. Meanwhile, cook the ground beef in a large skillet over medium heat until browned, breaking it up as it cooks. Drain excess grease.
  3. Stir the taco seasoning and water into the beef. Simmer for 2 to 3 minutes until evenly coated and fragrant.
  4. Spread about 2 tablespoons of refried beans over four tortillas. Top each with a quarter of the seasoned beef, then sprinkle a little of the cheddar and mozzarella over the meat.
  5. Place a second tortilla on top of each stack. Spread the tops with enchilada sauce, then finish with the remaining cheddar and mozzarella.
  6. Return the assembled pizzas to the oven and bake for 5 to 7 minutes, until the cheese is melted and bubbly and the edges are deeply golden.
  7. Remove from the oven and top with diced tomatoes and sliced green onions. Let rest for 1 to 2 minutes, then slice and serve warm.

Notes

  • Crisp the tortillas well before assembling so the finished pizzas hold their shape.
  • Do not overload the center with too much filling or sauce, or the layers may soften.
  • Freshly shredded cheese melts more smoothly than pre-shredded cheese.
  • Reheat leftovers in the oven or toaster oven for the best crisp texture.
