Description

Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 cup orzo pasta
  • 1 whole lemon (sliced and juiced)
  • 3 garlic cloves (minced)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Season the salmon fillets with salt and pepper on both sides.
  3. Place the salmon in the skillet and cook for about 4 minutes per side until golden, then remove and set aside.
  4. In the same skillet, add butter and minced garlic, cooking until fragrant.
  5. Stir in the orzo pasta, then pour in the chicken broth and bring to a gentle simmer.

  7. Add heavy cream, grated parmesan cheese, and fresh spinach, stirring until creamy and spinach is wilted.
  8. Return the salmon to the skillet, add lemon slices and juice, and let everything heat through for 2 to 3 minutes.
  9. Garnish with chopped parsley and serve warm.
