Description

These easy salmon patties are golden and crispy on the outside, tender and flavorful on the inside. Perfect for quick dinners, meal prep, or using pantry staples, they’re a delicious way to enjoy salmon any day of the week.


Ingredients

  • 2 cans (14.75 oz total) canned salmon, drained
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1/4 cup green onions, finely chopped
  • 1/4 cup red bell pepper, finely diced
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil, for frying

Instructions

  1. Preheat a skillet over medium heat while you prepare the mixture.
  2. In a large bowl, combine salmon, eggs, breadcrumbs, green onions, red bell pepper, mayonnaise, Dijon mustard, parsley, garlic powder, salt, and black pepper. Mix well.
  3. Add olive oil to the skillet to coat the bottom.
  4. Form the salmon mixture into patties about ½-inch thick.
  5. Cook patties in batches, about 3–4 minutes per side, until golden brown and crispy.
  6. Drain on paper towels and garnish with fresh parsley if desired. Serve warm.

Notes

  • For best texture, chill patties for 15 minutes before frying.
  • Use panko for extra crispiness.
  • Freeze uncooked patties on a tray, then store in a freezer bag for up to 3 months.
  • Serve with tartar sauce, aioli, or a fresh lemon wedge for added flavor.
