These easy salmon patties are golden and crispy on the outside, tender and flavorful on the inside. Perfect for quick dinners, meal prep, or using pantry staples, they’re a delicious way to enjoy salmon any day of the week.

- 2 cans (14.75 oz total) canned salmon, drained
- 2 large eggs
- 1 cup breadcrumbs
- 1/4 cup green onions, finely chopped
- 1/4 cup red bell pepper, finely diced
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil, for frying
Instructions
- Preheat a skillet over medium heat while you prepare the mixture.
- In a large bowl, combine salmon, eggs, breadcrumbs, green onions, red bell pepper, mayonnaise, Dijon mustard, parsley, garlic powder, salt, and black pepper. Mix well.
- Add olive oil to the skillet to coat the bottom.
- Form the salmon mixture into patties about ½-inch thick.
- Cook patties in batches, about 3–4 minutes per side, until golden brown and crispy.
- Drain on paper towels and garnish with fresh parsley if desired. Serve warm.
Notes
- For best texture, chill patties for 15 minutes before frying.
- Use panko for extra crispiness.
- Freeze uncooked patties on a tray, then store in a freezer bag for up to 3 months.
- Serve with tartar sauce, aioli, or a fresh lemon wedge for added flavor.
