- 4 large flour tortillas
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 small red onion, chopped
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 2 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a skillet over medium heat and add olive oil.
- In a bowl, mix sour cream, paprika, chili powder, and minced garlic until smooth.
- Add the chicken to the skillet and cook until heated through and slightly golden.
- Add corn, diced tomatoes, chopped red onion, and the creamy mixture to the skillet and stir well.
- Cook everything together for a few minutes until heated and slightly thickened.
- Stir in shredded cheese and let it melt into the mixture.
- Spoon the filling into tortillas, wrap tightly, slice, and serve warm.
Notes
- Warm the tortillas before assembling for easier wrapping.
- Adjust spice level by adding more or less chili powder.
- Do not overfill the tortillas to prevent tearing.
- Add fresh herbs at the end for extra flavor.
