Description

A creamy, spicy chicken burrito packed with juicy chicken, fresh vegetables, and melted cheese, all wrapped in a soft tortilla for a satisfying and flavorful meal.


Ingredients

  • 2 cups cooked and diced chicken pieces
  • 4 large flour tortillas
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 small red onion, chopped
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat a skillet over medium heat and add olive oil.
  2. In a bowl, mix sour cream, paprika, chili powder, and minced garlic until smooth.
  3. Add the chicken to the skillet and cook until heated through and slightly golden.
  4. Add corn, diced tomatoes, chopped red onion, and the creamy mixture to the skillet and stir well.
  5. Cook everything together for a few minutes until heated and slightly thickened.
  6. Stir in shredded cheese and let it melt into the mixture.
  7. Spoon the filling into tortillas, wrap tightly, slice, and serve warm.

Notes

  • Warm the tortillas before assembling for easier wrapping.
  • Adjust spice level by adding more or less chili powder.
