- 1 pound salmon fillets, cut into bite-sized cubes
- 1/2 cup cornstarch
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 cup vegetable oil, for frying
- 1/3 cup mayonnaise
- 2 tablespoons sriracha
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 2 cups cooked white rice (optional, for serving)
- 2 stalks green onions, chopped (for garnish)
Instructions
- Heat the vegetable oil in a deep skillet or frying pan over medium heat until shimmering.
- In a bowl, mix cornstarch, salt, pepper, and garlic powder. Toss salmon pieces in the mix to coat evenly.
- Set a plate lined with paper towels nearby to drain the salmon after frying.
- In a separate bowl, whisk together mayonnaise, sriracha, honey, and soy sauce until smooth. Set aside.
- Fry salmon in batches for 2–3 minutes per side until golden and crispy. Remove and drain on paper towels.
- Toss hot salmon gently in the firecracker sauce or drizzle over the top to keep the crunch. Sprinkle with chopped green onions.
- Serve over rice, in lettuce wraps, or as a snack.
Notes
- Use fresh salmon for the best texture and flavor.
- Let the salmon rest for a minute after frying before saucing to keep it crispy.
- Adjust the sriracha in the sauce to control the spice level.
