Description

  • 5 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1/2 cup dry white wine
  • 6 cups beef broth
  • 2 bay leaves
  • 3 sprigs fresh thyme
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon freshly cracked black pepper
  • 1 small baguette, sliced and toasted
  • 2 cups shredded Gruyère cheese

Instructions

  1. Set your oven to broil and ensure your soup bowls are oven-safe.
  2. In a Dutch oven over medium heat, melt butter and olive oil. Add onions and cook for 40–45 minutes, stirring occasionally, until deeply caramelized. Add minced garlic during the last few minutes.
  3. Deglaze with dry white wine, scraping the bottom of the pot. Stir in beef broth, bay leaves, thyme, salt, and pepper. Simmer for 20 minutes.
  4. Remove bay leaves and thyme sprigs. Ladle soup into broiler-safe bowls. Top with toasted baguette slices and shredded cheese.
  5. Place bowls under the broiler for 2–3 minutes until the cheese is bubbly and golden brown.
  6. Allow to cool slightly, then serve while hot and melty.

  • Use low-sodium broth to control saltiness.
  • Day-old bread works best for toasting and holding up in the soup.
  • Caramelize onions slowly for the best flavor—no rushing this step.
