Instructions
- In a large mixing bowl, combine the grated beets, grated carrots, and sliced red onion.
- Drizzle the lemon juice and olive oil over the mixture.
- Add the chopped parsley, mint, salt, and black pepper.
- Toss everything gently until well combined.
- Let the salad sit for 10–15 minutes to allow the flavors to meld.
