Ingredients

  • 1.5 pounds boneless skinless chicken thighs
  • 6 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat a large skillet or cast iron pan over medium-high heat for 2–3 minutes.
  2. In a mixing bowl, toss chicken pieces with salt, pepper, and red pepper flakes if using.
  3. Add olive oil to the hot pan, then place chicken in a single layer. Sear undisturbed for 3–4 minutes per side until golden and cooked through. Remove and set aside.
  4. Lower heat to medium. In the same pan, add butter. Once melted, stir in the minced garlic and cook for 1–2 minutes until fragrant.
  5. Return chicken to the pan and toss to coat in garlic butter. Let it cook for another minute.
  6. Sprinkle with chopped parsley and stir to combine.
  7. Serve hot over rice, pasta, or with crusty bread.

Notes

  • Pat chicken dry before searing for better browning.
  • Don’t burn the garlic—sauté gently over medium heat.
