- 12 ounces fettuccine pasta
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup freshly grated parmesan cheese
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt, or to taste
- 1/2 teaspoon freshly ground black pepper
Instructions
- Bring a large pot of salted water to a boil and cook the fettuccine until al dente. Reserve a small amount of pasta water, then drain.
- Season the shrimp with salt and black pepper.
- Heat olive oil and butter in a large skillet over medium heat.
- Add the shrimp in a single layer and cook for 2 to 3 minutes per side until pink and opaque. Remove from the skillet and set aside.
- In the same skillet, sauté the minced garlic for about 30 seconds until fragrant.
- Pour in the chicken broth and heavy cream. Simmer gently for 4 to 5 minutes until slightly thickened.
- Add the cooked pasta to the skillet along with the grated parmesan. Toss to coat, adding a splash of reserved pasta water if needed to loosen the sauce.
- Return the shrimp to the skillet and stir gently until heated through.
- Stir in lemon juice and fresh parsley. Adjust seasoning if needed and serve immediately.
Notes
- Do not overcook the shrimp, remove them as soon as they turn pink to keep them tender.
- Use freshly grated parmesan for the smoothest sauce texture.
- If the sauce becomes too thick, add a splash of pasta water or broth to loosen it.
