Description

Ingredients

  • 12 ounces fettuccine pasta
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup freshly grated parmesan cheese
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Bring a large pot of salted water to a boil and cook the fettuccine until al dente. Reserve a small amount of pasta water, then drain.
  2. Season the shrimp with salt and black pepper.
  3. Heat olive oil and butter in a large skillet over medium heat.
  4. Add the shrimp in a single layer and cook for 2 to 3 minutes per side until pink and opaque. Remove from the skillet and set aside.
  5. In the same skillet, sauté the minced garlic for about 30 seconds until fragrant.
  6. Pour in the chicken broth and heavy cream. Simmer gently for 4 to 5 minutes until slightly thickened.
  7. Add the cooked pasta to the skillet along with the grated parmesan. Toss to coat, adding a splash of reserved pasta water if needed to loosen the sauce.
  8. Return the shrimp to the skillet and stir gently until heated through.
  9. Stir in lemon juice and fresh parsley. Adjust seasoning if needed and serve immediately.

Notes

  • Do not overcook the shrimp, remove them as soon as they turn pink to keep them tender.
  • Use freshly grated parmesan for the smoothest sauce texture.
  • If the sauce becomes too thick, add a splash of pasta water or broth to loosen it.
