Description

Instructions

  1. Brush the zucchini slices on both sides with olive oil, then season evenly with salt, black pepper, and garlic powder.
  2. Heat a large skillet or grill pan over medium heat and cook the zucchini slices for 3 to 4 minutes per side until tender and lightly golden.
  3. In a bowl, mix the cream cheese, lemon juice, and chopped basil until smooth and well combined.
  4. Arrange the largest zucchini slices slightly overlapping on a flat surface to form a rectangular base.
  5. Spread the cream cheese mixture evenly over the zucchini base.
  6. Layer the spinach leaves, tomato slices, and mozzarella cheese evenly on top.
  7. Cover with another layer of zucchini slices, pressing gently to secure the sandwich.
  8. Return the assembled sandwich to the skillet, cover, and heat gently for 3 to 4 minutes until the cheese is melted.
  9. Transfer to a cutting board, slice into portions, and serve warm.
