Description

Soft, warmly spiced gingerbread cookies rolled in sugar and topped with chocolate truffle candies. They are cozy, festive, and perfect for holiday trays, cookie swaps, or a simple homemade treat with coffee or tea.


Ingredients

  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon

  • 3/4 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar, for rolling
  • 24 chocolate truffle candies

Instructions

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, ground ginger, ground cinnamon, ground cloves, baking soda, and salt.
  3. In a large mixing bowl, beat the softened butter and brown sugar until light and creamy.
  4. Add the egg, molasses, and vanilla extract, then mix until smooth and fully combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  6. Roll the dough into 1-inch balls, then coat each ball in the granulated sugar.
  7. Place the dough balls on the prepared baking sheets, leaving space between them.
  8. Bake for 8 to 10 minutes, until the edges are set and the cookies are puffed.
  9. Remove from the oven and immediately press one chocolate truffle candy into the center of each cookie.
  10. Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

  • Chill the dough briefly if your kitchen is warm, this helps the cookies keep their shape.
  • Do not overbake, the centers should stay soft for the best texture.
  • Press the chocolate candies in right after baking so they settle neatly into the cookies.
  • Store in an airtight container at room temperature for up to 4 days.
