Instructions
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, ground ginger, ground cinnamon, ground cloves, baking soda, and salt.
- In a large mixing bowl, beat the softened butter and brown sugar until light and creamy.
- Add the egg, molasses, and vanilla extract, then mix until smooth and fully combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
- Roll the dough into 1-inch balls, then coat each ball in the granulated sugar.
- Place the dough balls on the prepared baking sheets, leaving space between them.
- Bake for 8 to 10 minutes, until the edges are set and the cookies are puffed.
- Remove from the oven and immediately press one chocolate truffle candy into the center of each cookie.
- Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
- Chill the dough briefly if your kitchen is warm, this helps the cookies keep their shape.
- Do not overbake, the centers should stay soft for the best texture.
- Press the chocolate candies in right after baking so they settle neatly into the cookies.
- Store in an airtight container at room temperature for up to 4 days.
