Description

These Gingerbread Cinnamon Roll Pancakes are the ultimate cozy breakfast, combining the warm spices of gingerbread with the gooey swirl of a cinnamon roll in soft, fluffy pancake form.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar
  • 2 tablespoons granulated sugar
  • 1 1/2 cups milk
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted
  • 1 1/2 teaspoons vanilla extract
  • Maple syrup, for serving
  • Cinnamon Swirl: 1/3 cup brown sugar, 1 tablespoon ground cinnamon, 3 tablespoons melted butter

Instructions

  1. Preheat Your Equipment: Warm a nonstick skillet or griddle over medium-low heat while you prepare the batter.
  2. Combine Ingredients: In a large bowl, whisk flour, baking powder, cinnamon, ginger, nutmeg, salt, brown sugar, and granulated sugar. In another bowl, mix milk, eggs, melted butter, and vanilla. Combine the wet and dry mixtures, stirring gently until just combined.
  3. Prepare Your Cooking Vessel: Lightly grease your skillet or griddle with butter or spray. Let it heat evenly before pouring the batter.
  4. Assemble the Dish: Pour batter onto the skillet to form pancakes. Quickly swirl the cinnamon mixture on top of each using a squeeze bottle or piping bag.
  5. Cook to Perfection: Cook until bubbles form and edges are set, about 2–3 minutes. Flip and cook another 2 minutes. Wipe skillet between batches if needed.
  6. Finishing Touches: Stack the pancakes and top with a pat of butter, maple syrup, or glaze.
  7. Serve and Enjoy: Serve warm and fresh with your favorite breakfast drink.

Notes

  • Let the batter rest for 10 minutes to improve texture.
  • Use a squeeze bottle for more control over the swirl.
  • To keep pancakes warm, store them in the oven at 200°F while you finish the batch.
