Description

Ingredients

  • Fresh asparagus: 450 g, trimmed
  • Olive oil: 2 tablespoons
  • Fresh lemon juice: 2 tablespoons
  • Lemon zest: 1 teaspoon
  • Feta cheese: 100 g, crumbled
  • Cherry tomatoes: 150 g, halved
  • Red onion: 30 g, thinly sliced
  • Salt: 0.5 teaspoon
  • Black pepper: 0.25 teaspoon, freshly ground

Instructions

  1. Toss the trimmed asparagus with olive oil until evenly coated.
  2. Preheat a grill pan or outdoor grill over medium-high heat.
  3. Grill the asparagus for 6 to 8 minutes, turning occasionally, until tender with light char marks.
  4. Remove from the grill, let cool slightly, then cut into bite-sized pieces.
