Description

A rustic, flaky galette filled with golden grilled halloumi and creamy avocado slices, all wrapped in a buttery puff pastry crust. Perfect for brunch, lunch, or an elegant appetizer.

  • 1 sheet store-bought puff pastry, thawed
  • 200g halloumi cheese, sliced and lightly pan-seared
  • 2 medium ripe avocados, sliced
  • 1 egg yolk, beaten
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat and pan-sear halloumi slices until golden on both sides. Set aside.
  3. In a bowl, gently toss avocado slices with lemon juice, salt, and pepper.
  4. Roll out puff pastry on the prepared baking sheet.
  5. Layer grilled halloumi in the center of the pastry, leaving a 2-inch border. Arrange avocado slices over the cheese. Sprinkle with thyme.
  6. Fold the pastry edges over the filling, pleating as needed to create a rustic edge.
  7. Brush the folded edges with beaten egg yolk.
  8. Bake for 25–30 minutes or until the crust is golden and crisp.
  9. Let cool slightly before slicing. Garnish with extra herbs if desired. Serve warm or at room temperature.

Notes

  • Use ripe but firm avocados for better slicing and texture.
  • Let the galette cool for 5–10 minutes before slicing to help the filling set.
  • Pairs wonderfully with a side salad or cup of soup.
