Description
A rustic, flaky galette filled with golden grilled halloumi and creamy avocado slices, all wrapped in a buttery puff pastry crust. Perfect for brunch, lunch, or an elegant appetizer.

- 1 sheet store-bought puff pastry, thawed
- 200g halloumi cheese, sliced and lightly pan-seared
- 2 medium ripe avocados, sliced
- 1 egg yolk, beaten
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1 teaspoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a skillet, heat olive oil over medium heat and pan-sear halloumi slices until golden on both sides. Set aside.
- In a bowl, gently toss avocado slices with lemon juice, salt, and pepper.
- Roll out puff pastry on the prepared baking sheet.
- Layer grilled halloumi in the center of the pastry, leaving a 2-inch border. Arrange avocado slices over the cheese. Sprinkle with thyme.
- Fold the pastry edges over the filling, pleating as needed to create a rustic edge.
- Brush the folded edges with beaten egg yolk.
- Bake for 25–30 minutes or until the crust is golden and crisp.
- Let cool slightly before slicing. Garnish with extra herbs if desired. Serve warm or at room temperature.
Notes
- Use ripe but firm avocados for better slicing and texture.
- Let the galette cool for 5–10 minutes before slicing to help the filling set.
- Pairs wonderfully with a side salad or cup of soup.
