- 3/4 cup brewed coffee, warm
- 1 cup oats
- 2 tablespoons cocoa powder
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 180°C and line a rectangular baking pan with parchment paper.
- Soak the dates in warm brewed coffee for 10 minutes.
- Blend the soaked dates and coffee until smooth.
- Add eggs and vanilla extract to the mixture and blend again until combined.
- Transfer the mixture to a bowl and stir in oats, cocoa powder, and baking powder until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25 minutes or until a toothpick inserted comes out clean.
- Allow the cake to cool completely before slicing and serving.
