Ingredients

  • 3/4 cup brewed coffee, warm
  • 1 cup oats
  • 2 tablespoons cocoa powder
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 180°C and line a rectangular baking pan with parchment paper.
  2. Soak the dates in warm brewed coffee for 10 minutes.
  3. Blend the soaked dates and coffee until smooth.
  4. Add eggs and vanilla extract to the mixture and blend again until combined.
  5. Transfer the mixture to a bowl and stir in oats, cocoa powder, and baking powder until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 25 minutes or until a toothpick inserted comes out clean.
  8. Allow the cake to cool completely before slicing and serving.
