Description

  • 1 kilogram baby potatoes, washed
  • 4 tablespoons olive oil
  • 3 tablespoons melted butter
  • 5 garlic cloves, finely minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley or 2 tablespoons fresh chopped
  • 1 teaspoon paprika
  • 1 tablespoon lemon juice (optional)
  • Fresh chopped herbs for garnish (optional)

Instructions

  1. Place the baby potatoes in a large pot, cover with water, and season with a pinch of salt. Boil for 15 to 20 minutes until potatoes are fork tender.
  2. Preheat the oven to 220°C. Line a baking sheet with parchment paper and lightly drizzle with olive oil.
  3. Arrange the boiled potatoes on the baking sheet and gently smash each one using a potato masher or the bottom of a sturdy cup.
  4. In a small bowl, mix the olive oil, melted butter, minced garlic, oregano, thyme, parsley, salt, pepper, paprika, and lemon juice if using.
  5. Brush the herb garlic mixture generously over each smashed potato, ensuring the cracks absorb the flavor.
  6. Roast for 20 to 25 minutes until the potatoes are crispy and golden brown. Serve warm and garnish with fresh herbs if desired.
