Ingredients
- Baby potatoes: 1 kilogram
- Garlic cloves: 4 cloves, finely minced
- Olive oil: 4 tablespoons
- Fresh parsley: 2 tablespoons, finely chopped
- Fresh thyme: 1 tablespoon, leaves only
- Salt: 1 teaspoon
- Black pepper: 0.5 teaspoon, freshly ground
Instructions
- Place the baby potatoes in a large pot, cover with water, add a pinch of salt, and boil until fork tender, about 20 minutes.
- Preheat the oven to 220 degrees Celsius.
- Line a baking sheet with parchment paper and lightly brush with olive oil.
- Arrange the boiled potatoes on the baking sheet and gently smash each one using a potato masher or the bottom of a glass.
- Drizzle the remaining olive oil evenly over the potatoes.
- Sprinkle the minced garlic, salt, black pepper, parsley, and thyme over the smashed potatoes.
- Bake for 20 minutes, carefully flip each potato, then bake for another 10 minutes until golden and crispy.
- Remove from the oven, adjust seasoning if needed, and serve hot.
Notes
- Use potatoes of similar size so they cook evenly.
- Make sure the oven is fully preheated for the crispiest results.
- Avoid overcrowding the baking sheet to allow proper browning.
