Description

Crispy on the outside and fluffy on the inside, these Herbs & Garlic Smashed Potatoes are roasted to golden perfection with olive oil, garlic, and fresh herbs for a comforting, flavorful side dish that pairs with almost anything.


Ingredients

  • Baby potatoes: 1 kilogram
  • Garlic cloves: 4 cloves, finely minced
  • Olive oil: 4 tablespoons
  • Fresh parsley: 2 tablespoons, finely chopped
  • Fresh thyme: 1 tablespoon, leaves only
  • Salt: 1 teaspoon
  • Black pepper: 0.5 teaspoon, freshly ground

Instructions

  1. Place the baby potatoes in a large pot, cover with water, add a pinch of salt, and boil until fork tender, about 20 minutes.
  2. Preheat the oven to 220 degrees Celsius.
  3. Line a baking sheet with parchment paper and lightly brush with olive oil.
  4. Arrange the boiled potatoes on the baking sheet and gently smash each one using a potato masher or the bottom of a glass.
  5. Drizzle the remaining olive oil evenly over the potatoes.
  6. Sprinkle the minced garlic, salt, black pepper, parsley, and thyme over the smashed potatoes.
  7. Bake for 20 minutes, carefully flip each potato, then bake for another 10 minutes until golden and crispy.
  8. Remove from the oven, adjust seasoning if needed, and serve hot.

  • Use potatoes of similar size so they cook evenly.
  • Make sure the oven is fully preheated for the crispiest results.
  • Avoid overcrowding the baking sheet to allow proper browning.
