- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons pumpkin seeds
- 2 tablespoons fresh dill, chopped

Instructions
- Preheat the oven to 425°F and line a large baking sheet with parchment paper.
- In a large bowl, toss the cauliflower florets, chickpeas, and halved potatoes with olive oil, cumin, smoked paprika, salt, and black pepper until evenly coated.
- Spread the vegetables and chickpeas onto the prepared baking sheet in a single layer.
- Roast for 30 minutes, flipping halfway through, until the vegetables are golden and the chickpeas are lightly crispy.
- While the vegetables roast, blend the cooked beets, tahini, lemon juice, garlic, and a splash of water in a food processor until smooth and creamy.
- Spread the beetroot hummus into serving bowls.
- Top with the roasted cauliflower, chickpeas, and potatoes.
- Finish with pumpkin seeds, chopped dill, and sliced scallions before serving.
