Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup honey
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 cup corn kernels

Instructions

  1. Preheat your oven to 375°F and lightly grease a baking dish or skillet.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, honey, eggs, and melted butter until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Fold in the corn kernels evenly.
  6. Pour the batter into the prepared baking dish.
  7. Bake for 25 minutes or until golden and a toothpick inserted comes out clean.
  8. Brush with extra melted butter and drizzle with honey while warm.
