Ingredients

  • Sweet potatoes – 500 g, peeled and cubed
  • Olive oil – 15 ml
  • Ground beef – 400 g
  • Cottage cheese – 200 g
  • Hot honey – 30 ml
  • Garlic powder – 3 g
  • Smoked paprika – 3 g
  • Ground black pepper – 2 g
  • Salt – 4 g
  • Fresh parsley – 10 g, chopped

Instructions

  1. Preheat the oven to 200°C.
  2. In a bowl, toss the cubed sweet potatoes with olive oil, half of the salt, garlic powder, and smoked paprika until evenly coated.
  3. Spread the sweet potatoes on a baking tray in a single layer and roast for 25 minutes, turning halfway through, until tender and golden.
  4. Heat a large skillet over medium heat and add the ground beef.
  5. Cook the beef for 8 to 10 minutes, breaking it apart, and season with the remaining salt, garlic powder, smoked paprika, and black pepper until fully browned.
  6. Spoon the cottage cheese into a small bowl and stir gently to make it creamy.
  7. Divide the roasted sweet potatoes between two serving bowls.
  8. Top with the hot cooked beef and add dollops of cottage cheese.
  9. Drizzle generously with hot honey while warm.
  10. Finish with chopped fresh parsley and serve immediately.
