Ingredients
- Sweet potatoes – 500 g, peeled and cubed
- Olive oil – 15 ml
- Ground beef – 400 g
- Cottage cheese – 200 g
- Hot honey – 30 ml
- Garlic powder – 3 g
- Smoked paprika – 3 g
- Ground black pepper – 2 g
- Salt – 4 g
- Fresh parsley – 10 g, chopped
Instructions
- Preheat the oven to 200°C.
- In a bowl, toss the cubed sweet potatoes with olive oil, half of the salt, garlic powder, and smoked paprika until evenly coated.
- Spread the sweet potatoes on a baking tray in a single layer and roast for 25 minutes, turning halfway through, until tender and golden.
- Heat a large skillet over medium heat and add the ground beef.
- Cook the beef for 8 to 10 minutes, breaking it apart, and season with the remaining salt, garlic powder, smoked paprika, and black pepper until fully browned.
- Spoon the cottage cheese into a small bowl and stir gently to make it creamy.
- Divide the roasted sweet potatoes between two serving bowls.
- Top with the hot cooked beef and add dollops of cottage cheese.
- Drizzle generously with hot honey while warm.
- Finish with chopped fresh parsley and serve immediately.
