- 1 pound lean ground beef

- 1 teaspoon salt (divided)

- 1 cup cottage cheese
- 2 tablespoons hot honey (or to taste)

Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- Toss sweet potato cubes with olive oil, half the salt, and pepper. Spread evenly on the baking sheet and roast for 25–30 minutes, until golden and tender.
- While potatoes roast, heat a skillet over medium-high heat. Add ground beef, garlic powder, paprika, remaining salt, and pepper. Cook until browned, breaking apart with a spoon.
- In serving bowls, add a base layer of roasted sweet potatoes, then top with seasoned beef.
- Add a scoop of cottage cheese over the top.
- Drizzle with hot honey and garnish with fresh herbs.
