- 2 Wagyu strip steaks, 250 to 300 g each
- 3 tbsp hot honey
- 1 tbsp regular honey
- 3 cloves garlic, finely grated
- 1 tbsp soy sauce
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp black pepper
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp chili flakes (optional)
Instructions
- In a bowl, whisk together hot honey, regular honey, soy sauce, olive oil, garlic, smoked paprika, black pepper, onion powder, salt, and chili flakes.
- Pat the Wagyu strip steaks dry, then coat generously with the marinade. Refrigerate for 20 to 30 minutes.
- Heat a cast iron skillet over medium high heat. Once hot, sear the steaks for 2 to 3 minutes per side for medium rare, brushing with extra marinade as they cook.
- Transfer the steaks to a board and let them rest for 5 minutes. Drizzle with warm hot honey, slice against the grain, and serve.
Notes
- Ensure the skillet is very hot before searing for maximum caramelization.
- Store leftovers in an airtight container for up to 2 days.
- Resting the steak after cooking helps retain its juices.
