- 2 boneless chicken thighs, grilled and sliced
- 1 cup cooked white rice
- 1/3 cup hummus
- 1–2 small pita breads, warmed
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 cup pickled red onions
- 2 tablespoons crumbled feta cheese
- 1 lemon wedge
Instructions
- Preheat your skillet or grill pan over medium heat.
- If cooking chicken fresh, season and grill 5–7 minutes per side, then slice.
- Prepare all veggies by slicing cucumber, halving tomatoes, and setting out pickled onions.
- Warm the rice and pita bread.
- Spread hummus inside a wide bowl.
- Layer in rice, then arrange chicken, veggies, feta, and lemon around the bowl.
- Serve immediately with pita on the side.
