Description

A moist, tender loaf filled with naturally sweet dates and crunchy walnuts, offering cozy flavors and a soft crumb that makes it perfect for breakfast, tea time, or a comforting homemade snack.

Ingredients

Scale
  • 1 cup pitted dates, finely chopped
  • 3/4 cup walnuts, roughly chopped
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup brown sugar, packed
  • 1/2 cup neutral vegetable oil
  • 3/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 175°C and lightly grease a standard loaf pan.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt until evenly combined.
  3. In a separate bowl, whisk the eggs, brown sugar, vegetable oil, milk, and vanilla extract until smooth and glossy.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  5. Fold in the chopped dates and walnuts, ensuring they are evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for about 55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Chop the dates finely so they blend smoothly into the batter.
  • Avoid overmixing to keep the loaf tender and soft.
  • Let the loaf cool fully before slicing for clean, even slices.
