Ingredients

  • 4 salmon fillets, about 6 ounces each, cut into large pieces if preferred
  • 2 tablespoons olive oil, divided
  • 2 tablespoons unsalted butter, melted
  • 3 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1 medium jalapeño, finely minced
  • 3 cloves garlic, finely minced
  • 1/3 cup fresh cilantro, finely chopped
  • 1 teaspoon honey
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes, optional

Instructions

  1. Heat a large skillet over medium-high heat for 1 to 2 minutes.
  2. In a small bowl, stir together 1 tablespoon olive oil, melted butter, lime juice, lime zest, jalapeño, garlic, cilantro, honey, 1/2 teaspoon salt, black pepper, and red pepper flakes if using.
  3. Add the remaining 1 tablespoon olive oil to the skillet.
  4. Pat the salmon dry and season with the remaining 1/2 teaspoon salt.
  5. Place the salmon in the skillet in a single layer and cook for 3 to 4 minutes on the first side.
  6. Turn the salmon and cook for another 2 to 4 minutes, until golden, opaque, and cooked through.
  7. Transfer the salmon to a serving plate and spoon the jalapeño lime mixture over the top.
  8. Serve immediately with extra lime wedges if desired.

Notes

  • Pat the salmon dry well before cooking for the best sear.
  • Remove the jalapeño seeds for a milder flavor.
  • Use fresh lime juice for the brightest taste.
  • Do not overcook the salmon. It should stay moist and flake easily.
