- 4 salmon fillets, about 6 ounces each, cut into large pieces if preferred
- 2 tablespoons olive oil, divided
- 2 tablespoons unsalted butter, melted
- 3 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1 medium jalapeño, finely minced
- 3 cloves garlic, finely minced
- 1/3 cup fresh cilantro, finely chopped
- 1 teaspoon honey
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes, optional
Instructions
- Heat a large skillet over medium-high heat for 1 to 2 minutes.
- In a small bowl, stir together 1 tablespoon olive oil, melted butter, lime juice, lime zest, jalapeño, garlic, cilantro, honey, 1/2 teaspoon salt, black pepper, and red pepper flakes if using.
- Add the remaining 1 tablespoon olive oil to the skillet.
- Pat the salmon dry and season with the remaining 1/2 teaspoon salt.
- Place the salmon in the skillet in a single layer and cook for 3 to 4 minutes on the first side.
- Turn the salmon and cook for another 2 to 4 minutes, until golden, opaque, and cooked through.
- Transfer the salmon to a serving plate and spoon the jalapeño lime mixture over the top.
- Serve immediately with extra lime wedges if desired.
Notes
- Pat the salmon dry well before cooking for the best sear.
- Remove the jalapeño seeds for a milder flavor.
- Use fresh lime juice for the brightest taste.
- Do not overcook the salmon. It should stay moist and flake easily.
