Description

Ingredients

Instructions

  1. Preheat your oven to 350°F and lightly grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, mix yogurt, sugar, eggs, vegetable oil, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Gradually combine the dry ingredients into the wet mixture, stirring gently until just combined.
  5. Lightly toss blueberries with a bit of flour, then fold them into the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for about 50 minutes or until a toothpick inserted into the center comes out clean.

  9. In a small bowl, mix powdered sugar with lemon juice to form a smooth glaze.
