Description

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs, lemon zest, lemon juice, and vanilla extract, then mix until smooth.
  5. Gradually add the dry ingredients into the wet ingredients and mix until a soft dough forms.
  6. Chill the dough for 30 minutes for easier rolling and better crinkle texture.
  7. Place powdered sugar into a small bowl.
  8. Scoop the dough into evenly sized balls and roll each one generously in powdered sugar.
  9. Arrange the coated dough balls on the prepared baking sheet.
  10. Bake for 10 to 12 minutes until the cookies crack on top and the edges are lightly set.
  11. Allow the cookies to cool on the baking sheet for several minutes before transferring to a wire rack.
