Description

Creamy lemon garlic chicken alfredo featuring golden seared chicken breast and silky fettuccine tossed in a rich parmesan cream sauce, brightened with fresh lemon juice, zest, and parsley.


Ingredients

  • 2 large chicken breasts (about 1.5 lbs), boneless and skinless
  • 12 oz fettuccine pasta, dry
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup parmesan cheese, freshly grated
  • 1 large lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil for the pasta.
  2. Season both sides of the chicken breasts generously with salt and black pepper.
  3. Heat the olive oil in a large skillet over medium high heat until shimmering.
  4. Cook the chicken for about 5 to 6 minutes per side until golden and cooked through, then remove and let rest before slicing.
  5. In the same skillet, melt the butter and sauté the minced garlic for about 30 seconds until fragrant.
  6. Cook the fettuccine in the boiling water until al dente, then drain, reserving a cup of pasta water.
  7. Pour the heavy cream into the skillet and bring to a gentle simmer.
  8. Whisk in the parmesan cheese until melted and smooth, adding reserved pasta water if needed to loosen the sauce.
  9. Add the cooked fettuccine directly into the sauce and toss until every strand is coated.
  10. Remove the skillet from the heat and stir in the lemon juice, lemon zest, and chopped parsley.
  11. Top the pasta with the sliced chicken and serve immediately while warm.

Notes

  • Use freshly grated parmesan for the smoothest sauce
  • Add lemon juice off the heat to prevent the cream from curdling
  • Reserve pasta water in case the sauce needs loosening
  • Let the chicken rest before slicing to keep it juicy
