- 4 medium chicken breasts, about 6 ounces each
- 2 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 3 cloves garlic, finely minced
- 1 teaspoon dried oregano or 1 tablespoon fresh oregano, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon chopped parsley for garnish (optional)
Instructions
- In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper until well combined.
- Place the chicken breasts in a shallow dish and pour the marinade over them, coating evenly. Let the chicken marinate for at least 10 minutes.
- Heat a skillet over medium heat and add a small drizzle of olive oil. Sear the chicken for 6 to 7 minutes per side, or until golden brown and cooked through to 165°F.
- Transfer the chicken to a plate and allow it to rest for 5 minutes before slicing or serving. Garnish with parsley if desired.
