Description
Juicy chicken marinated in fresh lemon juice, olive oil, garlic, and oregano, then cooked until golden and tender with bright, Mediterranean-inspired flavor.
Ingredients
- Chicken thighs or chicken breasts: 900 grams, boneless and skinless
- Fresh lemon juice: 80 milliliters
- Lemon zest: 1 tablespoon
- Olive oil: 60 milliliters
- Dried oregano: 2 teaspoons
- Garlic: 4 cloves, finely minced
- Salt: 1.5 teaspoons
- Black pepper: 1 teaspoon, freshly ground
- Paprika: 1 teaspoon
Instructions
- In a large mixing bowl, whisk together the lemon juice, lemon zest, olive oil, dried oregano, garlic, salt, black pepper, and paprika until well combined.
- Add the chicken to the bowl and turn each piece until fully coated with the marinade. Let it rest for at least 20 minutes to absorb the flavors.
- Heat a large skillet over medium heat until hot.
- Place the marinated chicken into the skillet in a single layer and cook for 6 to 7 minutes per side until golden brown and fully cooked.
- Remove the chicken from the skillet and let it rest for 5 minutes before serving to keep it juicy.
Notes
- Marinate the chicken up to 24 hours in advance for deeper flavor.
- Do not overcrowd the pan, cook in batches if necessary for even browning.
- Zest the lemon before juicing to make preparation easier.
