Description

Savory lo mein noodles tossed with tender chicken, crisp vegetables, and a glossy soy-based sauce that comes together in just 30 minutes. Better than takeout and perfect for busy weeknights.


Ingredients

  • 12 ounces dried lo mein noodles
  • 1 pound boneless skinless chicken breast, thinly sliced
  • 1 cup julienned carrots
  • 1 medium red bell pepper, thinly sliced
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 tablespoons vegetable oil

Instructions

  1. Bring a large pot of water to a boil and cook the lo mein noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, and the cornstarch slurry until smooth.
  3. Heat vegetable oil in a large skillet or wok over medium high heat.
  4. Add the sliced chicken and stir fry for 4 to 5 minutes until fully cooked. Remove from the pan and set aside.
  5. Add minced garlic, carrots, and red bell pepper to the same pan. Stir fry for 2 to 3 minutes until slightly tender but still crisp.
  6. Return the cooked chicken to the pan, add the drained noodles, and pour in the sauce mixture.
  7. Toss everything together for 2 to 3 minutes until the noodles are evenly coated and heated through.
  8. Stir in the sliced green onions, give a final toss, and serve hot.

Notes

  • Prep all ingredients before cooking since stir frying moves quickly.
  • Cook noodles just until tender to avoid a mushy texture.
  • If the noodles seem dry when reheating, add a splash of water to loosen the sauce.
