- 12 ounces dried lo mein noodles
- 1 pound boneless skinless chicken breast, thinly sliced
- 1 cup julienned carrots
- 1 medium red bell pepper, thinly sliced
- 3 green onions, sliced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 2 tablespoons vegetable oil
Instructions
- Bring a large pot of water to a boil and cook the lo mein noodles according to package instructions. Drain and set aside.
- In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, and the cornstarch slurry until smooth.
- Heat vegetable oil in a large skillet or wok over medium high heat.
- Add the sliced chicken and stir fry for 4 to 5 minutes until fully cooked. Remove from the pan and set aside.
- Add minced garlic, carrots, and red bell pepper to the same pan. Stir fry for 2 to 3 minutes until slightly tender but still crisp.
- Return the cooked chicken to the pan, add the drained noodles, and pour in the sauce mixture.
- Toss everything together for 2 to 3 minutes until the noodles are evenly coated and heated through.
- Stir in the sliced green onions, give a final toss, and serve hot.
Notes
- Prep all ingredients before cooking since stir frying moves quickly.
- Cook noodles just until tender to avoid a mushy texture.
- If the noodles seem dry when reheating, add a splash of water to loosen the sauce.
