- 400 grams Italian sausage
- 3 cups chopped kale
- 3 medium potatoes, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add Italian sausage and cook until browned, breaking it apart as it cooks.
- Add chopped onion and minced garlic, cook until softened and fragrant.
- Stir in diced potatoes and chicken broth.
- Bring to a simmer and cook for about 20 minutes until potatoes are tender.
- Add chopped kale and heavy cream, stir gently.
- Cook for another 5 minutes until kale is tender.
- Season with salt and black pepper to taste.
- Serve hot and enjoy.

- For a thicker texture, mash some of the potatoes in the pot.
