Description

A warm, buttery split-top roll stuffed with creamy macaroni and cheese blended with tender lobster chunks, finished with a glossy brush of extra melted butter and fresh parsley.


Ingredients

  • 2 cups (200 grams) elbow macaroni
  • 1 cup (150 grams) cooked lobster meat, chopped
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons all-purpose flour
  • 2 cups (480 milliliters) whole milk
  • 1 1/2 cups (170 grams) sharp cheddar cheese, shredded
  • 1/2 cup (50 grams) mozzarella cheese, shredded
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 4 split-top rolls
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil and cook the macaroni until al dente. Drain and set aside.
  3. In a medium saucepan over medium heat, melt 2 tablespoons of butter. Stir in the flour and cook for 1 minute until lightly golden.
  4. Slowly whisk in the milk, stirring constantly until thickened.
  5. Reduce heat and add cheddar and mozzarella. Stir until melted and smooth. Season with salt, black pepper, and paprika.
  6. Fold in the cooked macaroni, then gently stir in the chopped lobster.
  7. Melt the remaining 2 tablespoons butter and brush the outside of each split-top roll.
  8. Place rolls on a baking sheet and toast in the oven for about 5 minutes until lightly golden.
  9. Spoon the lobster mac and cheese filling into each toasted roll.
  10. Sprinkle with fresh parsley and serve immediately.

Notes

  • Grate cheese fresh for the smoothest sauce texture.
  • Do not overcook the lobster to keep it tender.
  • Reheat filling gently with a splash of milk if making ahead.
  • Toast rolls just before serving for best texture.
