Description

Ingredients

  • 1 cup small pasta rings
  • 2 medium carrots, sliced
  • 2 medium potatoes, diced
  • 2 medium tomatoes, chopped
  • 6 cups vegetable broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place a large pot over medium heat and warm it up.
  2. Add olive oil, then sauté the diced onion and minced garlic until soft and fragrant.
