Description
A classic Thai dessert made with tender steamed glutinous rice soaked in sweet coconut milk, served with fresh ripe mango slices and finished with a drizzle of creamy coconut sauce.
Ingredients
Scale
- 1 cup (200 g) glutinous rice
- 1 ½ cups (360 ml) full fat coconut milk, divided
- ⅓ cup (65 g) granulated sugar
- ½ teaspoon salt
- 2 large ripe mangoes, peeled and sliced
- 1 tablespoon toasted sesame seeds (optional)
Instructions
- Soak the glutinous rice in water for at least 4 hours or overnight, then drain thoroughly.
- Prepare a steamer with simmering water and line the steamer basket with a clean cloth. Spread the drained rice evenly and steam for 20 to 25 minutes until tender.
- While the rice is steaming, gently heat 1 cup of coconut milk with the sugar and salt in a saucepan over low heat until dissolved. Do not boil.
- Transfer the hot steamed rice to a mixing bowl and pour the warm coconut milk mixture over it. Stir gently to combine.
- Cover and let the rice rest for 20 minutes to fully absorb the coconut milk.
- Warm the remaining ½ cup coconut milk slightly to use as a drizzle sauce.
- Serve the sticky rice with sliced mango, drizzle with the coconut sauce, and sprinkle with toasted sesame seeds if using.
Notes
- Use fully ripe mangoes for the best sweetness and flavor.
- Do not skip soaking the rice, it ensures proper texture.
- Serve slightly warm or at room temperature for best results.
