Description

Ingredients

  • Chicken breasts, 600 g, boneless and skinless
  • Olive oil, 30 ml
  • Unsalted butter, 30 g
  • Garlic cloves, 4 large, finely minced
  • Heavy cream, 360 ml
  • Chicken broth, 120 ml
  • Sun-dried tomatoes, 80 g, chopped
  • Parmesan cheese, 60 g, finely grated
  • Dried Italian seasoning, 5 g
  • Paprika, 3 g
  • Salt, 5 g, or to taste
  • Black pepper, 3 g, freshly ground
  • Fresh basil, 10 g, chopped for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides with salt, black pepper, and paprika.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken breasts and sear for 5 to 6 minutes per side until golden brown and cooked through. Remove and set aside.
  3. Lower the heat to medium and add the minced garlic to the same skillet. Sauté for about 30 seconds until fragrant.
  4. Pour in the chicken broth and scrape the bottom of the pan to release the browned bits.
  5. Add the heavy cream, Italian seasoning, and sun-dried tomatoes. Stir well and let the sauce simmer for 5 minutes until slightly thickened.
  6. Stir in the Parmesan cheese until fully melted and smooth.
  7. Return the chicken to the skillet and spoon the sauce over the top. Simmer gently for 5 minutes.
  8. Remove from heat, garnish with fresh basil, and serve warm.
