Ingredients

  • 4 boneless skinless chicken thighs (about 1.5 pounds)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup chopped sun-dried tomatoes
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh basil, chopped (for garnish)

Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Season chicken thighs with salt and pepper, then sear them for 4–5 minutes per side until golden. Remove and set aside.
  3. Lower the heat, add minced garlic, and sauté for about 30 seconds.
  4. Pour in chicken broth and scrape up any browned bits from the skillet.
  5. Stir in heavy cream, sun-dried tomatoes, parmesan, Italian seasoning, and red pepper flakes. Simmer for 2–3 minutes.
  6. Return the chicken to the skillet and spoon sauce over it. Simmer for 10–12 minutes until cooked through.
  7. Garnish with fresh basil and serve hot with pasta, rice, or bread.
