- 4 boneless skinless chicken thighs (about 1.5 pounds)
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup freshly grated parmesan cheese
- 1/2 cup chopped sun-dried tomatoes
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- Fresh basil, chopped (for garnish)
Instructions
- Heat a large skillet over medium heat and add olive oil.
- Season chicken thighs with salt and pepper, then sear them for 4–5 minutes per side until golden. Remove and set aside.
- Lower the heat, add minced garlic, and sauté for about 30 seconds.
- Pour in chicken broth and scrape up any browned bits from the skillet.
- Stir in heavy cream, sun-dried tomatoes, parmesan, Italian seasoning, and red pepper flakes. Simmer for 2–3 minutes.
- Return the chicken to the skillet and spoon sauce over it. Simmer for 10–12 minutes until cooked through.
- Garnish with fresh basil and serve hot with pasta, rice, or bread.
