- 2 cans (15 ounces each) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 4 cups vegetable broth
- 1 can (13.5 ounces) full-fat coconut milk
- 2 cups baby spinach
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large soup pot over medium heat.
- Add olive oil, diced onion, and garlic. Cook for 4 to 5 minutes until softened and fragrant.
- Stir in tomato paste, paprika, Italian seasoning, and red pepper flakes.
- Add sweet potatoes, chickpeas, cherry tomatoes, and vegetable broth. Stir well.
- Bring the soup to a gentle boil, then reduce heat to medium-low and simmer uncovered for 20 minutes until sweet potatoes are tender.
- Stir in coconut milk and baby spinach. Simmer for 5 more minutes until creamy and the spinach has wilted.
- Season with salt and black pepper.
- Garnish with fresh parsley and serve warm.
