Description

  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 2 cups sweet potatoes, peeled and cubed
  • 2 cans (15 ounces each) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 4 cups vegetable broth
  • 1 can (13.5 ounces) full-fat coconut milk
  • 2 cups baby spinach
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat a large soup pot over medium heat.
  2. Add olive oil, diced onion, and garlic. Cook for 4 to 5 minutes until softened and fragrant.
  3. Stir in tomato paste, paprika, Italian seasoning, and red pepper flakes.
  4. Add sweet potatoes, chickpeas, cherry tomatoes, and vegetable broth. Stir well.
  5. Bring the soup to a gentle boil, then reduce heat to medium-low and simmer uncovered for 20 minutes until sweet potatoes are tender.
  6. Stir in coconut milk and baby spinach. Simmer for 5 more minutes until creamy and the spinach has wilted.
  7. Season with salt and black pepper.
  8. Garnish with fresh parsley and serve warm.
