- 12 oz shellbows pasta
- 3 tbsp olive oil
- 1 shallot, finely minced
- 3 garlic cloves, finely minced
- 12 oz mushrooms, sliced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 1 cup vegetable broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan
- 1 tsp salt
- 1 tsp black pepper
- 1 handful fresh basil, chopped
- 1 handful fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil. Add the shellbows and cook until al dente. Reserve 1 cup of pasta water, then drain and set aside.
- Heat the olive oil in a deep skillet over medium heat. Add the minced shallot and cook until soft and fragrant. Add the garlic and sauté until lightly golden.
- Add the sliced mushrooms and cook until they release their moisture and turn deep golden brown.
- Stir in the oregano, thyme, smoked paprika, salt, and pepper. Let the spices toast for 30 seconds.
- Pour in the vegetable broth and simmer until reduced by half.
- Add the heavy cream and Parmesan. Stir until the sauce becomes smooth, creamy, and thick.
- Add the cooked shellbows to the pan and toss to coat. Add reserved pasta water as needed to adjust consistency.
- Stir in the chopped basil and parsley. Serve warm.
Notes
- Use freshly grated Parmesan for the smoothest, creamiest sauce.
- If the sauce thickens too much, gradually add pasta water to loosen it.
- Let the mushrooms brown fully before adding liquids for deeper flavor.
