Description

Ingredients

  • Shellbow pasta: 340 grams
  • Cremini mushrooms: 450 grams, sliced
  • Olive oil: 2 tablespoons
  • Unsalted butter: 2 tablespoons
  • Garlic: 4 cloves, minced
  • Vegetable broth: 240 milliliters
  • Heavy cream: 360 milliliters
  • Grated Parmesan cheese: 80 grams
  • Sun-dried tomatoes: 60 grams, chopped
  • Italian seasoning: 1 teaspoon
  • Red pepper flakes: 0.5 teaspoon
  • Salt: 1 teaspoon
  • Black pepper: 0.5 teaspoon
  • Fresh parsley: 2 tablespoons, chopped

Instructions

  1. Bring a large pot of salted water to a boil and cook the shellbow pasta according to package instructions until al dente. Reserve 120 milliliters of pasta water, then drain.
  2. Heat olive oil and butter in a wide skillet over medium heat. Add sliced mushrooms and cook for 8 to 10 minutes until golden and tender.
  3. Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
  4. Pour in the vegetable broth and simmer for 2 minutes, scraping up any browned bits from the pan.
  5. Stir in heavy cream, sun-dried tomatoes, Italian seasoning, red pepper flakes, salt, and black pepper. Simmer gently for 5 minutes until slightly thickened.
  6. Add grated Parmesan cheese and stir until fully melted and the sauce is smooth.
  7. Add the cooked pasta to the skillet and toss to coat evenly. Add reserved pasta water gradually if needed to loosen the sauce.
  8. Remove from heat, sprinkle with fresh parsley, and serve warm.
