Ingredients
- Shellbow pasta: 340 grams
- Cremini mushrooms: 450 grams, sliced
- Olive oil: 2 tablespoons
- Unsalted butter: 2 tablespoons
- Garlic: 4 cloves, minced
- Vegetable broth: 240 milliliters
- Heavy cream: 360 milliliters
- Grated Parmesan cheese: 80 grams
- Sun-dried tomatoes: 60 grams, chopped
- Italian seasoning: 1 teaspoon
- Red pepper flakes: 0.5 teaspoon
- Salt: 1 teaspoon
- Black pepper: 0.5 teaspoon
- Fresh parsley: 2 tablespoons, chopped
Instructions
- Bring a large pot of salted water to a boil and cook the shellbow pasta according to package instructions until al dente. Reserve 120 milliliters of pasta water, then drain.
- Heat olive oil and butter in a wide skillet over medium heat. Add sliced mushrooms and cook for 8 to 10 minutes until golden and tender.
- Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
- Pour in the vegetable broth and simmer for 2 minutes, scraping up any browned bits from the pan.
- Stir in heavy cream, sun-dried tomatoes, Italian seasoning, red pepper flakes, salt, and black pepper. Simmer gently for 5 minutes until slightly thickened.
- Add grated Parmesan cheese and stir until fully melted and the sauce is smooth.
- Add the cooked pasta to the skillet and toss to coat evenly. Add reserved pasta water gradually if needed to loosen the sauce.
- Remove from heat, sprinkle with fresh parsley, and serve warm.
