Description

A rich and comforting dish featuring golden seared salmon in a creamy garlic parmesan sauce, served over buttery mashed potatoes.


Ingredients

  • 4 salmon fillets
  • 2 pounds potatoes
  • 4 tablespoons butter
  • 1 cup heavy cream
  • 4 garlic cloves
  • 1/2 cup grated parmesan cheese
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat a skillet over medium heat and bring a pot of salted water to a boil for the potatoes.
  2. Season the salmon fillets with salt, black pepper, paprika, and onion powder.
  3. Add olive oil to the skillet and heat until shimmering.
  4. Place the salmon in the skillet and cook until golden on both sides, then remove and set aside.
  5. In the same skillet, sauté garlic until fragrant, then add chicken broth, heavy cream, and parmesan cheese. Simmer until the sauce thickens.
  6. Return the salmon to the skillet and let it finish cooking in the sauce.
  7. Meanwhile, boil potatoes until tender, then mash with butter and a portion of the cream until smooth.
  8. Stir fresh parsley into the sauce and adjust seasoning as needed.
  9. Serve mashed potatoes topped with salmon and spoon the creamy sauce over the top.
