- 4 salmon fillets
- 2 pounds potatoes
- 4 tablespoons butter
- 1 cup heavy cream
- 4 garlic cloves
- 1/2 cup grated parmesan cheese
- 1 cup chicken broth
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
Instructions
- Preheat a skillet over medium heat and bring a pot of salted water to a boil for the potatoes.
- Season the salmon fillets with salt, black pepper, paprika, and onion powder.
- Add olive oil to the skillet and heat until shimmering.
- Place the salmon in the skillet and cook until golden on both sides, then remove and set aside.
- In the same skillet, sauté garlic until fragrant, then add chicken broth, heavy cream, and parmesan cheese. Simmer until the sauce thickens.
- Return the salmon to the skillet and let it finish cooking in the sauce.
- Meanwhile, boil potatoes until tender, then mash with butter and a portion of the cream until smooth.
- Stir fresh parsley into the sauce and adjust seasoning as needed.
- Serve mashed potatoes topped with salmon and spoon the creamy sauce over the top.
Notes
- Use russet potatoes for the creamiest texture
- Do not overcook the salmon to keep it tender
- Add cream gradually to control consistency
- Fresh parsley adds brightness at the end
