- 400 grams panettone, cubed
- 500 grams mascarpone cheese
- 1 cup heavy cream
- 3 large eggs
- 3/4 cup granulated sugar
- 2 tablespoons matcha powder
- 2 tablespoons cherry powder
- 1 teaspoon vanilla extract
Instructions
- Prepare a clean work area and set out a rectangular baking dish.
- Beat the eggs and granulated sugar until pale and fluffy.
- Add the mascarpone cheese and vanilla extract, then mix until smooth.
- In a separate bowl, whip the heavy cream to soft peaks.
- Gently fold the whipped cream into the mascarpone mixture until light and fully combined.
- Arrange a layer of cubed panettone in the bottom of the baking dish.
- Spread a thick layer of the mascarpone mixture over the panettone.
- Repeat the layers until all the panettone and cream mixture are used.
- Cover and refrigerate for at least 4 hours, or overnight, until set.
- Just before serving, dust alternating stripes of matcha powder and cherry powder over the top.
- Slice and serve chilled.
Notes
- For the best texture, chill overnight before serving.
- Use slightly stale panettone so it absorbs the cream without becoming too soft.
- Sift the matcha and cherry powder for a clean, even finish.
- For neat slices, use a warm knife and wipe it clean between cuts.
