- 1 1/2 pounds Yukon Gold potatoes, cut into wedges
- 3 cups broccoli florets
- 1 can (15 ounces) chickpeas, drained and dried
- 1 cup cherry tomatoes, halved
- 1 1/2 cups plain Greek yogurt
- 1 medium cucumber, grated and squeezed dry
- 3 cloves garlic, minced
- 3 tablespoons fresh dill, chopped
- 2 tablespoons lemon juice
- 4 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 1/4 cup sliced almonds
Instructions
- Preheat the oven to 425°F and line a large baking sheet with parchment paper.
- In a large bowl, toss the potato wedges, broccoli florets, and chickpeas with olive oil, smoked paprika, oregano, salt, and black pepper until evenly coated.
- Spread the vegetables and chickpeas onto the prepared baking sheet in a single layer.
- Roast for 35 to 40 minutes, flipping halfway through, until the potatoes are golden and crispy and the broccoli is lightly charred.
- While the vegetables roast, prepare the tzatziki by combining Greek yogurt, grated cucumber, garlic, fresh dill, lemon juice, and a pinch of salt in a bowl. Stir well and refrigerate until ready to serve.
- Spread the tzatziki into serving bowls.
- Top with roasted potatoes, broccoli, chickpeas, cherry tomatoes, sliced almonds, and extra fresh dill if desired.
- Serve immediately while warm.

- Dry the potatoes and chickpeas well before roasting for maximum crispiness.
- Do not overcrowd the baking sheet or the vegetables may steam instead of roast.
