- 1 pound ground beef
- 1 cup corn kernels

- 2 stalks green onions, sliced
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons hot honey
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili flakes
Instructions
- Preheat your oven to 400°F.
- In a bowl, toss the cubed sweet potatoes with olive oil, paprika, salt, and pepper.
- Spread the sweet potatoes evenly on a baking sheet.
- Cook the ground beef in a skillet over medium heat with a pinch of salt and pepper until browned.
- Roast the sweet potatoes for 25 minutes until tender and slightly crispy. In a bowl, mix the corn with cilantro and shredded cheese.
- Combine roasted sweet potatoes and cooked beef in serving bowls, then top with the corn mixture and drizzle with hot honey.
- Garnish with green onions and serve warm.
