Description

Juicy, spiced Middle Eastern kofta kebabs made with ground beef, fresh herbs, and warm spices. Perfect for grilling, meal prep, or weeknight dinners.


Ingredients

  • 1 pound ground beef (85% lean)
  • 1 small onion, grated
  • 3 garlic cloves, minced
  • 1/4 cup parsley, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon allspice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Grate the onion and finely chop the garlic and parsley. Set aside.
  2. In a large bowl, combine the ground beef, onion, garlic, parsley, cumin, coriander, allspice, salt, and pepper. Mix with your hands until just combined.
  3. Divide the mixture into 8 portions and shape each one into a long oval around a skewer.
  4. Preheat a grill, grill pan, or skillet over medium-high heat.
  5. Brush the kebabs with olive oil. Grill for 4–5 minutes per side or until browned and cooked through.
  6. Let the kebabs rest for a couple of minutes off the heat before serving.

Notes

  • Don’t overmix the meat to avoid tough kebabs.
  • Chill the mixture before shaping to help it hold together.
  • Test a small piece in the pan to adjust seasoning if needed.
