Ingredients
Scale
- 1 pound ground beef (85% lean)
- 1 small onion, grated
- 3 garlic cloves, minced
- 1/4 cup parsley, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon allspice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Grate the onion and finely chop the garlic and parsley. Set aside.
- In a large bowl, combine the ground beef, onion, garlic, parsley, cumin, coriander, allspice, salt, and pepper. Mix with your hands until just combined.
- Divide the mixture into 8 portions and shape each one into a long oval around a skewer.
- Preheat a grill, grill pan, or skillet over medium-high heat.
- Brush the kebabs with olive oil. Grill for 4–5 minutes per side or until browned and cooked through.
- Let the kebabs rest for a couple of minutes off the heat before serving.
Notes
- Don’t overmix the meat to avoid tough kebabs.
- Chill the mixture before shaping to help it hold together.
- Test a small piece in the pan to adjust seasoning if needed.
