Description

Sweet roasted carrots coated in warm spicy nduja and served over creamy stracciatella, finished with fresh dill for a bold yet balanced dish.

  • 1 pound carrots, peeled and trimmed
  • 3 tablespoons nduja paste
  • 1 cup stracciatella cheese
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 tablespoon honey
  • 2 tablespoons fresh dill, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Toss the carrots in a bowl with olive oil, salt, and black pepper until evenly coated.
  3. Spread the carrots on the baking sheet in a single layer.
  4. Roast for 25 minutes until tender and lightly caramelized.
  5. In a small saucepan gently warm the nduja with minced garlic and honey until the mixture loosens and becomes glossy.
  6. Toss the roasted carrots in the warm nduja mixture until fully coated.
  7. Spread the stracciatella onto a serving plate.
  8. Arrange the warm carrots over the stracciatella.
  9. Finish with fresh dill and serve immediately.
