Description

A cozy Nordic-style salmon soup with tender salmon chunks, soft potatoes, sweet carrots, and a creamy broth finished with fresh dill and lemon.


Ingredients

  • 500 g salmon fillets, skinless and cut into chunks
  • 500 g potatoes, peeled and diced
  • 200 g carrots, sliced
  • 1 medium onion, finely chopped
  • 1 liter fish broth
  • 250 ml heavy cream
  • 30 g butter
  • 15 g fresh dill, chopped
  • 1 lemon, cut into wedges
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon allspice

Instructions

  1. Melt the butter in a large soup pot over medium heat.
  2. Add the chopped onion and cook until soft and translucent.
  3. Stir in the carrots and potatoes, coating them in the butter.
  4. Pour in the fish broth and add salt, black pepper, and allspice.
  5. Bring to a gentle simmer and cook for about 15 minutes, until vegetables are tender.
  6. Add the salmon chunks carefully to the pot.
  7. Lower the heat, stir in the heavy cream, and cook for 5 minutes until the salmon is just cooked through.
  8. Remove from heat, sprinkle with fresh dill, and serve with lemon wedges.
